How Is Whey Protein Made? From Milk to Powder

You scoop whey into your shaker and drink it. But have you ever wondered how that powder is actually made? It doesn’t start in a lab — it starts with a cow.

Step 1: Cheese production

Whey protein is a byproduct of cheese making. When enzymes (usually chymosin) are added to milk, it separates into two parts: curds — which become cheese — and a watery liquid. That liquid is whey.

About 90% of the milk going into a cheese factory ends up as liquid whey. It used to be considered waste. Today, it’s one of the most valuable byproducts in the food industry.

Step 2: Filtration

Liquid whey contains only about 1% protein. To turn it into a usable supplement, it needs to be concentrated. This happens through filtration.

Microfiltration and ultrafiltration

The whey is pushed through membranes that let fat and lactose pass through but retain proteins. The result is whey protein concentrate (WPC) with 60-80% protein.

Further purification for isolate

Want more than 80% protein? An extra step follows: cross-flow microfiltration or ion-exchange chromatography. This produces whey protein isolate (WPI) with 90%+ protein and minimal lactose.

A study by Smithers (2008) describes how modern membrane technology has increased protein yield from whey by more than 50% compared to methods from the 1980s (PubMed).

Step 3: Drying

After filtration, it’s still a liquid. To make powder, spray-drying is used: the concentrated whey is sprayed as a fine mist into a heated chamber. The water evaporates and what remains is the dry powder you know.

Temperature matters here. Too high and the proteins denature (their structure changes). That’s why manufacturers use controlled low temperatures to preserve biological activity.

Step 4: Flavouring and packaging

Raw whey powder tastes like... nothing special. So manufacturers add flavourings, sweeteners (usually sucralose or stevia) and sometimes thickeners. Then it’s packaged and shipped.

Concentrate vs. isolate vs. hydrolysate

The difference is in the processing:

  • Concentrate (WPC): 60-80% protein. Still contains some fat and lactose. Cheapest.
  • Isolate (WPI): 90%+ protein. Almost no lactose. More expensive due to extra filtration.
  • Hydrolysate (WPH): Isolate or concentrate that has been enzymatically broken down into smaller peptides. Faster absorption, but also more expensive and often more bitter.

Naclerio et al. (2017) found that hydrolysate did not produce significantly better muscle protein synthesis than isolate in trained athletes (PubMed).

Quality differences between brands

Not all whey is equal. What to look for:

  • Protein percentage: Calculate it yourself — (protein per serving / serving size) × 100. Some brands pad with cheap amino acids (amino spiking).
  • Flavourings: More flavour = more additives = less protein per gram.
  • Source: Grass-fed whey is a marketing term — there’s no evidence it’s nutritionally superior.

Summary

Whey protein isn’t some mysterious lab product. It’s a cheese byproduct that’s converted into a high-quality protein supplement through filtration and drying. The difference between concentrate, isolate and hydrolysate is purely in how many extra processing steps there are — and that’s reflected in the price.
